Bristol Spirit are the powerhouse of pop-ups right now (do get in touch if you run a pop-up and want to take advantage of their gorgeous kitchen) and have housed the likes of Wings Diner, Mission Pizza and now the Japanese sensations, Tsukemono.
Chefs Iris Hable and Adam Hartshorne are taking their culinary skills and relaxed, fun take on Japanese dining to BS5 and are well known for specialising in gorgeous pickles, including their infamous bright pink renkon. They will be offering Izakaya bar – style eating, serving sharing plates of popular Japanese dishes. Some dishes I have my eye on is the kakuni (slow cooked pork belly, pictured below) and their new vegan ice cream offering flavours like miso-ginger and black sesame.
They haven’t forgotten their favourites though and I am pleased to hear the fried chicken and okonomiyaki (a Japanese savoury pancake with plenty of toppings) will be also making a welcome appearance.
Bristol Spirit will be getting in on the action by serving up Japanese inspired cocktails and mocktails as well as their usual range of beers and wines (plus the house-made infused gins and vodkas!).
Catering for everyone from vegans to ethical omnivores, the menu launches at Bristol Spirit on Wednesday April 4th and runs until Saturday 28th, with food served from 6 – 9.30pm Wednesday to Fridays, and on Saturdays from 2 – 9:30.
